Splendido Mare, A Belmond Hotel, part of the LVMH Group, is a charming guesthouse in the heart of the Portofino.

Its celebrated restaurant, DaV Mare, embodies all the pleasures of piazzetta living through refined cuisine, curated in partnership with the 3-Michelin-star Cerea family.

For the next season, we are looking for a Chef de Rang to join the team at DaV Mare, Belmond's unique collaboration with the Cerea family.

This harbourside restaurant offers big Ligurian flavours, gastronomic excellence and outstanding service from breakfast through to dinner.
He/she reports to the Maitre.


Main Duties:


  • Fulfil the operations restaurant, according to the Belmond policies, high standards and procedures;
  • Monitor all aspects of the customers' experience, from the restaurant layout before they arrive to the experience they receive during the service. Act to enhance a flawless service and anticipate Guests' needs
  • Establish and maintain good relationships with all Guests and handle requests and enquiries
  • Coordinate and monitor Commis de Rang assigned to him/her
  • Contribute to the achievement of the economic targets of the outlet

  • Drive results: provide genuine and consistent high levels of service by anticipating and exceeding expectations of guests and colleagues
  • Global perspective: treat each other with respect and inclusiveness regardless of position, level or background

Others requirements:


  • Fluent in English and Italian; a third language preferred
  • Previous professional experience within the same role in a luxury environment
  • Passion for service and ambition to grow professionally
