For the next season, we are looking for a Sous Chef to join the team at DaV Mare, Belmond's unique collaboration with the Cerea family.

This harbourside restaurant offers big Ligurian flavours, gastronomic excellence and outstanding service from breakfast through to dinner.
He/she reports to the Executive Chef.


Main duties & responsibilities:


  • Assisting the Executive Chef in managing the kitchen brigade and in creating and preparing menus
  • Coordinating food production and controlling food quality, taste and presentation of dishes
  • Ensuring adherence to all health, safety and security procedures
  • Collaborating with all F&B departments: Restaurant, Banqueting, Room Service, Bar
  • Compliance with quality and service standards

Requirements:

  • Strong leadership skills
  • Global perspective: treat one another with respect and inclusiveness regardless of position, level or background
  • Flexibility regarding hours is essential, including willingness to work weekends, holidays and evenings
  • Ability to work under pressure
  • Strong motivation and passion for the job with the ability to adapt to a dynamic and challenging environment

Other requirements:


  • Minimum 3 years' experience in the same role in a fine dining restaurant (Michelin star is a plus)
  • Fluent in English and Italian
  • Outstanding leadership skills
  • Flexibility and excellent efficiency in working under pressure
